yummy bruschettas with figs, avo, goat cheese and rocket

What I love about figs? Simply everything, from its vibrant colour and texture to a beautiful, sweet, almost honey like taste when they’re ripe. And the fact they can be combined with dozen of other foods which I love. Here accompanied by crispy toasts, creamy avocado and goat cheese. There’s no better thing to wake up to then these beauties served in bed on a lazy weekend morning!

INGREDIENTS 

1 SERVING

  • handful rocket salad
  • 2 figs 
  • 1 avocado 
  • 60 g goat cheese 
  • 1 tbsp olive oil extra virgin, squeezed lemon juice and honey
  • salt and pepper, chili flakes (optional) 
  • 4 slices bread (crispy or whole grain)

METHOD

  • If using a whole grain bread, toast it so that it’s crunchy. 
  • Rinse rocket and put on the toasts, season with salt and pepper. Put sliced figs, avocado and goat cheese on top of each slice of bread. 
  • Drizzle with olive oil, lemon juice and honey dressing. Sprinkle with chili flakes if using.
